Ingredients

  • 1 onion
  • 1 Garlic clove
  • 12 olives
  • 1 tbsp Olive Oil
  • 1 can peeled tomatoes (250 g)
  • Salt
  • pepper (ground)
  • 1 tsp sugar
  • 2 Tomatoes
  • Cayenne pepper
  • fresh grated Parmesan

Instructions

    Peel and finely chop the onion and garlic. Slice olives into thin strips from the pits.

    Sauté onion and garlic in hot oil. Add peeled tomatoes with olive slices. Season with sugar, salt and pepper. Bring to a boil briefly, then simmer covered for about 15 minutes over gentle heat. Meanwhile cook spaghetti al dente in plenty of salted water.

    Simmer fresh tomatoes, peel and halve them. Remove seeds, dice flesh into small cubes, season with salt and pepper.

    Taste the tomato sauce with cayenne pepper. Drain pasta and immediately mix with hot tomato sauce. Serve on deep plates. Sprinkle fresh tomato cubes and grated parmesan as desired. Serve immediately.
