Pasta with Hemp Meatballs

Ingredients

  • 1 slice of toast bread (from the day before)
  • 3 tbsp milk
  • 400 g mixed ground meat
  • 1 egg
  • 1 tsp lemon zest
  • Salt
  • Pepper
  • 2 shallots
  • 1 Garlic clove
  • 4 tbsp olive oil
  • 1 tbsp Tomato Paste
  • 500 g diced tomatoes (canned)
  • a pinch of sugar
  • 400 g macaroni

Instructions

    For the meatballs, pour the toast bread with milk and soak briefly. Add the ground meat, egg and lemon zest, season with salt and pepper, and knead well. Form small balls from the mixture.

    For the tomato sauce, peel and finely chop the shallots and garlic, then sauté in 2 tbsp hot olive oil in a pot until translucent. Stir in the tomato paste, add the tomatoes, and simmer gently for about 20 minutes. Season with salt, sugar and pepper to taste.

    Cook the pasta in plenty of salted water until al dente.

    Brown the meatballs in the remaining hot oil for about 5 minutes on all sides. Remove from the pan and drain on kitchen paper. Let them rest in the tomato sauce for 1-2 minutes.

    To serve, drain the macaroni, set it aside, and combine with the meatballs in the tomato sauce.
