Ingredients

  • 400 g green tagliatelle
  • 400 g thick white beans (canned)
  • 2 tbsp finely sliced mint
  • 1 tbsp Lemon Juice
  • 1 finely chopped garlic clove
  • 200 g Cherry tomatoes
  • 3 tbsp olive oil
  • Salt
  • ground pepper
  • lemon zest
  • mint

Instructions

    Cook the pasta in plenty of boiling salted water until al dente. In the meantime, combine the washed, drained beans with mint, lemon juice, garlic, halved cherry tomatoes and olive oil in a pot and sauté for 3–4 minutes while stirring occasionally.

    Drain the pasta and mix it with the bean mixture. Taste and serve garnished with lemon zest and fresh mint leaves.
