- 400 g tagliatelle
- 1 onion (blue)
- 1 tomato
- 1 small-medium zucchini
- 1 red bell pepper
- 1 handful of spinach (fresh)
- 150 g Feta
- 40 ml olive oil
- Salt
- Pepper
- 150 ml Vegetable broth

Wash the zucchini, cut it lengthwise in half and slice into rounds. Peel and halve the onion, cutting it into half-rings. Wash, rinse, and shake dry the spinach. Wash the bell pepper, halve it, remove seeds, strip off the inner membranes, and cut into bite-sized pieces. Wash the tomatoes, halve them, remove stems, and cut into wedges.

Cook the pasta according to package instructions.

Heat oil in a pan and sauté the vegetables until they soften, then add broth and simmer gently for about 5 minutes. Add tomatoes and spinach, heat through, and season with salt and pepper.

Distribute the cooked pasta on pre-warmed deep plates, pour the vegetable sauce over it, season again with salt and pepper, crumble feta on top, and serve.
