Ingredients

  • 350 g fresh spinach
  • 2 shallots
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 0.5 tsp turmeric
  • 100 g yellow lentils
  • 200 ml vegetable broth
  • 400 g whole wheat tagliatelle
  • Salt
  • 4 tomatoes
  • 100 ml heavy cream
  • Pepper
  • 40 g Parmesan

Instructions

    Wash, trim and dry the spinach. Peel and finely dice the shallots and garlic. Wash the tomatoes, remove stems and quarter them.

    Heat oil in a large pan and sauté onions and garlic over medium heat until translucent. Add turmeric and lentils, pour in broth, and simmer on low for about 5 minutes. Add spinach and tomatoes and simmer for another 5 minutes, stirring occasionally.
