Ingredients

  • 500 g spaghetti
  • 500 g fresh young spinach
  • 0.5 bunch green asparagus
  • 250 g goat soft cheese (firm to cut)
  • Salt
  • Pepper (freshly ground)
  • olive oil

Instructions

    Wash the spinach, drain it, and blanch in boiling salted water for 1 minute. Drain well. Peel the garlic. Wash the asparagus, trim the tough ends, cut into 3 cm pieces, and blanch in plenty of boiling salted water for 7 minutes.

    Remove the asparagus pieces and drain them. Add the spaghetti to the asparagus water and cook until al dente. Drain. Set aside one cup of the cooking liquid. Toss the spaghetti with 3-4 tablespoons olive oil, spinach, and asparagus pieces.

    Season generously with pepper. Crumble the goat cheese over the pasta and fold in briefly. If needed, add a splash of the reserved cooking liquid, plate, and serve immediately.
