Ingredients

  • 500 g spiral pasta (e.g., Gemelli or Fusili)
  • 1 whole fresh head of garlic
  • 1-2 fresh red chilies
  • 6 tbsp Olive oil
  • Sea salt
  • freshly ground black pepper
  • 1 tbsp butter
  • fresh chopped herbs to taste (e.g., parsley or basil)

Instructions

    Separate the cloves from the head. Peel 4 cloves and slice thinly. Wash, dry, trim stems of chilies, cut lengthwise, remove seeds, and slice into fine rings. Cook pasta according to package in plenty of boiling salted water.

    While pasta cooks, heat olive oil in a non‑stick pan, sauté unpeeled garlic cloves and sliced garlic. Add chili rings and cook briefly.

    Drain pasta over a colander, reserving some cooking water. Toss pasta with the garlic mixture, add a splash of reserved water, stir well. Finish with butter, season with salt and pepper, sprinkle fresh herbs, and serve.
