Pasta with Spinach and Cheese

- 200 g young spinach
- 50 g Pine nuts
- 1 Garlic clove
- 1 handful parsley
- 80 g grated parmesan
- 0.5 tsp lemon zest
- 7 tbsp olive oil
- Salt
- Pepper
- 400 g farfalle

For the pesto, rinse and wash the spinach, dry it thoroughly, and remove any tough stems. Set aside 3 handfuls. Toast the pine nuts in a pan without added fat until golden brown, then remove from heat and let cool. Peel the garlic. Wash and shake off excess water on the parsley. Blend the spinach, parsley, 2 tbsp pine nuts, 1 garlic clove, 2 tbsp parmesan, lemon zest, and 6-7 tbsp oil into a creamy pesto. Season with salt and pepper.

Cook the farfalle in plenty of boiling salted water until al dente.

Slice the remaining garlic thinly. Sauté it in the leftover oil until translucent. Add the reserved spinach and cook briefly. Drain the pasta, let it dry well, then combine with the pesto and remaining pine nuts in the pan. Toss everything together with the sautéed spinach. Plate, sprinkle with extra parmesan, and serve with a fresh salad if desired.
