Pasta with Shrimp and Asparagus

Ingredients
- 500 g Green Asparagus
- 1 Shallot
- 1 Garlic clove
- 20 large shrimp (deveined and peeled except for tail segment)
- Salt
- chili flakes
- 2 tbsp olive oil
- 100 ml dry white wine
- pepper (ground)
- 400 g orecchiette pasta
- 100 ml heavy cream
- 2 Tbsp grated Parmesan
- a splash lemon juice
- basil (for garnish)
Instructions

Peel the lower third of the asparagus and cut the stalks into 3-4 cm pieces. Peel and finely chop the shallot and garlic. Wash and pat dry the shrimp. Season with salt and chili flakes and brown in a hot pan with oil. Remove from the pan. Sauté the asparagus with the shallot and garlic in the hot pan for 1‑2 minutes. Deglaze with wine, season with salt and pepper, cover and steam gently for 5‑6 minutes until tender yet crisp.

Cook the pasta in salted water al dente.

Stir the cream and parmesan into the sauce, season with lemon juice, salt, and pepper. Return the shrimp to the sauce and let it simmer uncovered for 2‑3 minutes. Toss the drained pasta with the sauce.

Plate and serve garnished with basil.
