Black Sea Bream Wrapped in Prosciutto with Spaghetti

Ingredients
- 750 g black sea bream fillet
- 4 dried tomatoes (packed in oil)
- 1 Organic lemon
- Salt
- freshly ground black pepper
- 6 slices prosciutto (or other smoked ham)
- 2 tbsp olive oil
- 300 g spaghetti
- 1 basil
- 3 tbsp olive oil
- 4 tbsp grated Parmesan

Rinse the fish under cold water and pat dry. Finely chop the tomatoes. Wash the lemon, zest it into fine strips and squeeze out the juice. Drizzle the fish with the lemon juice. Finely chop half of the lemon zest if desired and mix with the tomatoes. Season with salt and pepper.

Cut the prosciutto in half lengthwise as needed. Cut the fish into portions. Lay the prosciutto on a work surface and spread the dried tomatoes over it. Place the fish on top and wrap the prosciutto tightly around it.

Heat a grill pan, brush the steaks with olive oil. Place the fish in the pan and cook over medium heat for about 6-7 minutes, turning once.

Bring water to a boil in a large pot, season with salt. Cook the pasta according to package instructions until al dente. Rinse the basil leaves, shake dry and finely chop. Drain the pasta, reserving some cooking water. Mix the pasta with olive oil, basil, parmesan and lemon zest, adding reserved cooking water as needed.

Plate the black sea bream with the spaghetti and serve.
