- 1 ripe Mango
- 0.5 cucumber
- 1 red chili pepper
- 1 Shallot
- 2 tbsp mango chutney
- Salt
- Pepper (freshly ground)
- Lemon juice
- 12 matjes fillets (pre‑cooked, with back fin)
- Lemon balm (for garnish)

For the salsa, peel the mango, cut the flesh away from the pit into very small cubes. Wash the cucumber, halve it lengthwise, deseed and cube it similarly. Rinse the chili, halve it lengthwise, remove seeds and white membranes, then finely chop.

Peel the shallot, finely chop it as well, and mix with mango, cucumber, chili, and chutney. Season with salt, pepper, and lemon juice. Pat the matjes fillets dry and arrange them on plates topped with the salsa. Serve garnished with lemon balm.
