Gratinated Cod Fillet with Beans

Ingredients
- 3 slices of toast bread
- 4 dried tomatoes (pickled in oil)
- a pinch of oregano (dried)
- 60 g Butter
- 4 cod fillets (about 160 g each)
- 2 tbsp lemon juice
- Salt
- Pepper
- 1 stalk bean herb
- 300 g princess beans
- 200 g Sugar snap peas

Preheat the oven to 180°C fan.

Place the toast bread in a blender and process into crumbs. Roughly chop the tomatoes and combine with the crumbs, oregano, and softened butter, kneading until smooth.

Drizzle the fish fillets with lemon juice, season with salt and pepper, and spread the crumb mixture over each fillet.

Arrange on a baking tray lined with parchment paper and bake in the preheated oven for about 20 minutes.

Meanwhile, trim the beans and sugar snap peas. Cook the beans in boiling salted water with the bean herb for 8‑10 minutes until al dente; add the sugar snap peas 1‑2 minutes before the end of cooking. Drain, remove the bean herb, and place on warmed plates. Arrange the fish on top and serve immediately.
