Ingredients

  • 500 g penne
  • 1 small onion
  • 2 Garlic cloves
  • 6 ripe tomatoes
  • 2 tbsp capers
  • olive oil (cold-pressed)
  • 4 tbsp pitted black olives
  • 300 g pre-cooked shrimp
  • 4 tbsp chopped parsley
  • Salt
  • Pepper (freshly ground)
  • 1 tsp sugar

    Peel and finely chop the onion and garlic. Wash the tomatoes and cut them into pieces. Rinse the capers under cold water and drain. Heat 3 tbsp oil and sauté the onion and garlic until translucent. Add the tomatoes and 100 ml water, cover, and simmer over medium heat for about 4-5 minutes. Add the capers and olives and continue to cook for another minute. Season with salt, pepper, and sugar. Add the shrimp to the sauce and let it simmer on low heat for 4 minutes until cooked through.

    Meanwhile, boil the pasta in plenty of salted water until al dente, then drain. Toss the noodles with the sauce, parsley, and 1-2 tbsp olive oil, adjust seasoning with salt and pepper if needed, and serve immediately.
