Ingredients
- 300 g salmon (diced)
- 350 g penne pasta
- 1 Shallot
- 1 tsp butter
- 1 tbsp Noilly Prat
- 0.125 l heavy cream
- 200 g mascarpone
- Salt
- pepper from grinder
- 1 tsp Cayenne pepper
- juice and zest of one orange

Peel the shallot, dice it, and sauté in hot butter until translucent; deglaze with Noilly Prat, pour in heavy cream, and simmer for about 5 minutes. Stir in mascarpone, season with salt, pepper, and cayenne pepper, then adjust flavor with orange juice and zest. Add the salmon cubes and cook for another 5 minutes.

Cook the pasta in plenty of boiling salted water until al dente, drain, and serve topped with the salmon sauce.
