Ingredients

  • 400 g spaghetti
  • Salt
  • 0.5 handful parsley
  • 2 Eggs
  • 3 tbsp pesto rosso
  • 30 g freshly grated Parmesan
  • plant fat (for frying)

Instructions

    Cook the pasta in boiling salted water until al dente. Wash the parsley, pick off the leaves and finely chop. Beat the eggs with the pesto, parsley and parmesan. Drain the pasta, let it dry well, then mix into the egg mixture.

    Heat a generous amount of oil in a non‑stick pan over medium heat. Using a fork, form noodle nests and drop them into the hot oil. Press flat with a spatula and fry until golden brown on both sides. Remove onto paper towels to drain excess fat. Serve the patties with a refreshing quark dip if desired.
