Pasta with Salmon

Ingredients
- 1 handful dill
- 1 onion
- 1 Garlic clove
- 4 tbsp olive oil
- 150 ml vodka
- 400 g chopped tomatoes (canned)
- Salt
- Cayenne pepper
- 1 tsp sugar
- 1 tbsp sherry vinegar
- 400 g penne
- 150 g salmon fillet
- a pinch ground anise
- 100 ml heavy cream
Instructions

Rinse the dill, shake dry and pluck off the tips. Peel and finely chop the onion and garlic. Sauté in 2 tbsp oil until translucent, then deglaze with vodka. Add tomatoes and season with salt, pepper, sugar, and sherry vinegar. Simmer gently for 10-15 minutes.

Cook the penne in salted water until al dente.

Rinse the salmon fillet, pat dry, and season with salt, pepper, and anise. In remaining oil, pan‑sear the salmon over medium heat for 2–3 minutes per side.

Stir in cream and about half of the dill into the tomato sauce, taste again. Drain the pasta, let it drain briefly, then toss with the sauce. Flake the salmon and combine with the pasta on a plate. Sprinkle remaining dill before serving.
