Ingredients

  • 400 g spaghettini
  • 250 g fresh tuna (or frozen)
  • 2 lemons (juice as desired)
  • 1 tbsp grated lemon zest
  • 500 g Green Asparagus
  • olive oil (cold‑pressed)
  • Salt
  • Pepper (freshly ground)
  • 0.5 lemon (juice)
  • fresh mint

Instructions

    Cut the tuna into bite‑sized pieces, season with salt and drizzle with a little lemon juice. Wash the asparagus and trim the tough lower part; halve the remaining stalks. Blanch in boiling salted water for about 8 minutes, then drain.

    Heat 3 tbsp oil in a pan and sear the tuna over high heat on all sides. Cook the Spaghettini until al dente and drain. Toss the spaghetti with 5 tbsp oil, plenty of pepper, lemon zest and lemon juice. Fold in the tuna and asparagus, mix well, plate, garnish with mint leaves and lemon slices, and serve immediately.
