Ingredients
- 40 g cashews
- 500 g spaghetti
- Salt
- 1 Garlic clove
- 2 handfuls coriander leaves
- 6 tbsp sesame oil (mild)
- 2 tbsp freshly grated Parmesan
- 1 splash Lemon juice

Instructions

Roast the cashews in a hot pan for a short time, then let them cool.

Cook the pasta in salted water until al dente.

Peel the garlic. Rinse and dry the coriander leaves, then shake off excess water. Blend the garlic, nuts, oil, grated parmesan, and a splash of pasta cooking water into a creamy pesto. Season with lemon juice, salt, and pepper.

Drain the pasta well and arrange it on plates. Spoon the pesto over the pasta and grate parmesan on top. Garnish with coriander leaves before serving.
