Pasta with Saffron and Olives

Ingredients

  • 500 g pappardelle (wide ribbon pasta)
  • Salt
  • 3 onions
  • 80 g black olives (pitted)
  • 4 tbsp olive oil
  • 1 tbsp margarine
  • 0.2 g saffron strands (2 sachets)
  • pepper (ground)
  • arugula leaves (for garnish)

Instructions

    Cook the pasta according to package instructions in boiling salted water. Meanwhile, peel and slice the onions into strips; finely chop the olives.

    Heat olive oil and margarine in a large pan and sauté the onion strips until translucent. Stir in the saffron and cook over low heat while stirring until the onions turn yellow.

    Add the nearly drained pasta to the pan, toss with the olives, and season with salt and pepper. Plate in deep bowls and garnish with arugula leaves.
