Pasta with Meat Sauce

Ingredients
- 500 g flour
- 2 tbsp olive oil
- 2 Eggs
- Salt
- 350 g mixed ground meat
- 2 onions
- 1 stalk Celery
- 2 carrots
- 300 g tomatoes
- 2 tbsp chopped parsley
- 100 g Graviera cheese or Gruyère cheese (or Greyerzer)

Sift the flour into a bowl, mix with 1 tsp salt, create a well in the center and add olive oil, eggs and 150 ml lukewarm water. Quickly knead into a smooth dough, knead for 10 minutes, wrap in plastic film and let rest for 1 hour.

Roll the dough out thinly in portions, dust with flour and cut into 2 cm wide squares with a sharp knife. Spread the squares on a kitchen towel.

For the sauce, peel and finely chop onion and garlic, sauté in oil. Wash celery and dice finely, peel carrots and cut finely. Heat tomatoes over boiling water, shock in cold water, peel and cube. Add ground meat to the onion mixture and brown until crumbly. Add vegetables and simmer while stirring for 5 minutes. Season with salt and pepper. Cook the pasta squares in plenty of boiling salted water for 3 minutes, drain and set aside.

Arrange the pasta on plates, pour sauce over it, grate cheese on top and sprinkle with parsley.
