Pasta with Vegetables

Ingredients

  • 400 g penne
  • Salt
  • 1 large zucchini
  • 2 bell peppers (yellow and red)
  • 2 red onions
  • 2 Garlic cloves
  • 4 mushrooms
  • 4 tbsp olive oil
  • pepper (ground)
  • 1 tbsp chopped thyme

Instructions

    Cook the pasta in plenty of salted water until al dente, then drain and rinse with cold water.

    Wash the zucchini, trim ends, and cut into about 7 cm long sticks. Wash the bell peppers, halve them, remove seeds and membranes, and slice lengthwise into strips. Peel the onion and garlic; finely dice the garlic and slice the onions into strips. Clean and halve the mushrooms.

    Heat the oil in a grill pan with the garlic and sauté the vegetables until crisp for 2-3 minutes.

    Add the pasta to the vegetable pan, season with salt, pepper and thyme, drizzle with olive oil, and serve immediately.
