Noodles with Mushroom Sauce

Ingredients

  • 200 g Flour
  • 2 Eggs
  • 2 tbsp olive oil
  • Salt
  • 400 g mixed mushrooms
  • 2 Spring Onions
  • 1 tbsp butter
  • 50 ml fresh espresso
  • 100 g whipping cream
  • 1 tbsp balsamic vinegar
  • Salt
  • black pepper (freshly ground)

Instructions

    Knead a dough from flour, eggs, olive oil and a pinch of salt. Roll it thin with a pasta machine or rolling pin. Cut into squares about 10 cm wide.

    Clean the mushrooms by small sections. Wash and trim the spring onions; cut the white parts into ~10 cm strips and slice the green parts into rings.

    Bring a large pot of salted water to boil for the noodles. In a pan heat butter, sauté the white onion strips and mushrooms for about 5 minutes. Deglaze with espresso, add cream and simmer for another 5 minutes. Season with balsamic vinegar, salt and pepper. Boil the pasta sheets in the hot water for 2–3 minutes, then drain and let them dry. Plate with the mushroom sauce and garnish with green spring onion rings.
