Pasta with Raisins, Onions and Cauliflower

Ingredients
- 400 g Cauliflower
- 1 onion
- 1 Garlic clove
- 300 g Penne
- Salt
- 1 tsp peanut oil
- 1 tsp freshly grated ginger
- pepper (ground)
- 100 ml tomato juice
- 100 ml Vegetable broth
- 40 g raisins
- 1 tbsp Rice vinegar
- chili powder
- 2 tbsp pine nuts

Wash and trim the cauliflower, then cut into florets. Peel the onion and slice into rings. Peel the garlic and finely chop.

Cook the penne in plenty of boiling salted water until al dente.

Meanwhile heat the oil and sauté the onions with the garlic and ginger. Add the cauliflower, season with salt and pepper, and pour in the tomato juice and vegetable broth. Simmer for about 8 minutes until tender. Stir in the raisins and finish the vegetables with vinegar and a pinch of chili.

Drain the penne, let it dry briefly, then toss. Plate on warmed dishes and sprinkle with pine nuts before serving.
