Pasta with Nasturtium

Ingredients
- 400 g flour (double-whisked)
- 4 eggs
- 1 tbsp Olive Oil
- 1 tsp salt
- flour for dusting
- a handful of nasturtium flowers

Knead the flour, eggs and oil with the salt into a smooth, supple dough. Add a little water or extra flour if needed. Shape the dough into a ball and wrap in plastic film; let rest about 30 minutes.

Divide the dough into 3–4 pieces and knead each again. Roll out on a lightly floured surface or use a pasta machine to roll thickly with a knife edge.

Pick the nasturtium flowers from their stems, rinse them, and place a few on one half of the dough. Lay the second half over it (using as little flour as possible; or brush with water/egg white) and run through the pasta machine again. Cut into strips for ribbon‑style noodles if desired. Let the finished noodles rest about 10 minutes.

Cook in boiling salted water for 3–4 minutes.
