Pasta with Pesto

Ingredients
- 300 g fresh young spinach
- 1 Garlic clove
- 50 g green olives (pitted)
- Salt
- black pepper (freshly ground)
- 30 g parmesan cheese (freshly grated)
- 1 tbsp pine nuts
- 50 ml olive oil
- 400 g spaghetti
- green olives (for garnish)

Wash the spinach, pat dry, and trim. Peel the garlic and roughly chop it. Let the spinach wilt in a little boiling salted water until drooping, then drain, rinse with cold water, squeeze out excess moisture, and coarsely chop.

Blend the spinach, garlic, olives, parmesan, and pine nuts in an electric food processor. Stir in the olive oil and season with salt and pepper to taste.

Cook the pasta in plenty of boiling salted water until al dente, then drain and let it rest.

Serve the pasta tossed with spinach pesto and garnish with green olives.
