- 800 g waxy potatoes
- Salt
- 800 g broccoli florets
- 1 egg
- 100 g crème fraîche
- 40 g grated cheese (e.g., Parmesan)

- 250 g yogurt
- 200 g smoked salmon (sliced)

Peel the potatoes and cook them in salted water for about 30 minutes.

Preheat the oven to 200°C (top heat).

Wash, trim, and cut the broccoli into florets; blanch in salted water for 3-4 minutes until firm. Shock in ice water and drain. Place in a gratin dish. Beat the egg with crème fraîche and cheese. Season with salt, pepper, and nutmeg, then spread over the broccoli. Bake in the oven for about 10 minutes until golden brown.

For the sauce, zest the lemon and squeeze its juice. Mix both with yogurt and season with salt. Arrange the potatoes with the sauce, broccoli, and salmon on plates and serve.
