Skrei with Fried Chorizo and Mashed Potatoes
Skrei with fried chorizo and mashed potatoes from Seafood from Norway: a great combination that appeals to both young and old.
Ingredients
- 800 g Norwegian Skrei fillet (winter cod)
- 5 tbsp salt
- 1 l water
- 1 tbsp Sunflower oil
- 100 g chorizo
- 2 sprigs parsley
- 0.5 pomegranate
- 1 lemon
- 600 g waxy potatoes
- 150 ml lukewarm milk (3.5% fat)
- 30 g Butter
- Pepper
Instructions

Preheat the oven to 200 °C.

Cut the Skrei into even portions.

Stir the salt into the water and let the Skrei soak in it.

After 15 minutes, remove the fish from the brine and pat it dry with kitchen paper.

Brown the skin side of the Skrei for about 3 minutes in sunflower oil until the skin starts to turn brown.

Place the Skrei skin-side up in a greased, oven-safe dish and bake it for about 3 minutes in the preheated oven until cooked through.

Slice the chorizo and fry it in the pan with the fat from the Skrei until crisp.

Chop the parsley, remove the seeds from the pomegranate, and grate the lemon zest with a fine grater.

Combine the parsley, pomegranate seeds, grated lemon zest, and chorizo.

Peel the potatoes and cut them into slices.

Cook the potatoes until tender, then mash them while adding milk and butter until the desired consistency is reached.

Season with salt and pepper to taste.

Serve the Skrei with the chorizo mixture and mashed potatoes.
