Ingredients
- 400 g spelt tagliatelle
- Salt
- 2 bunches parsley
- 2 cloves garlic
- 2 anchovy fillets (in oil)
- 150 g pecorino (chunked)
- 4 tbsp olive oil
- pepper (ground)
Instructions

Cook the pasta in boiling salted water until al dente.

Rinse the parsley, shake dry and finely chop. Peel the garlic and slice into thin sticks. Drain the anchovy fillets and finely chop them as well.

Break the cheese into small cubes.

Heat the oil in a pan and sauté the garlic until translucent. Add the parsley and anchovies and cook briefly. Drain the pasta, mix with the cheese, season with pepper, toss well, and serve on preheated plates.
