Ingredients

  • 100 g black olives (pitted)
  • 400 g canned pizza tomatoes
  • 1 tbsp Tomato Paste
  • 1 onion
  • 1 Garlic clove
  • 2 sprigs thyme
  • 100 g feta cheese (crumbled)
  • 400 g spaghetti
  • Salt
  • Pepper
  • 1 tbsp Olive Oil
  • a pinch of sugar

Instructions

    Cook the pasta in plenty of salted water until al dente. Peel and finely chop the onion and garlic, then sauté them in oil; add the canned tomatoes and tomato paste. Cover and simmer gently for 5–10 minutes.

    Wash the thyme, shake off excess moisture, and pluck the leaves. Roughly chop the olives. Add half a ladle of pasta water to the sauce, drain the noodles, let them drip, then stir in the olives and thyme. Bring back to a boil and season with salt and pepper. Plate the pasta, pour the sauce over it, and sprinkle with cheese before serving.
