Pasta with Nettle and Pine Nuts

Pasta with nettle and pine nuts from ➸ Spoonsparrow is always wonderfully good.

Ingredients

  • 400 g spaghetti
  • Salt
  • 300 g young nettle tips (the tender tips)
  • 30 g Butter
  • 1 small onion
  • 1 Garlic clove
  • 1 tbsp pink peppercorns (crushed)
  • 50 g freshly grated Parmesan
  • 50 g toasted pine nuts
  • freshly grated nutmeg

Instructions

    Cook the pasta in plenty of salted water until al dente, then rinse and drain. Wash the nettles. Boil them in plenty of salted water for about three minutes, then rinse, drain, and finely chop with a knife.

    Peel and finely chop the onion and garlic clove.

    Melt the butter in a pan and slowly sauté the onion and garlic until translucent. Add the nettles and pasta. Season with salt and crushed pink peppercorns, then fold in freshly grated Parmesan and pine nuts, seasoning with nutmeg. Plate on bowls and garnish with boiled nettle shoots before serving.
