Chicken Breast with Quinoa

Ingredients
- 4 chicken breast fillets
- 4 tsp butter
- 4 sprigs Parsley
- Salt
- Pepper (freshly ground)
- oil
- 250 g quinoa
- 1 onion
- 4 red bell peppers
- 2 red pepperoni
- 500 g passata
Instructions

Lightly pound the chicken breast fillets to flatten them. Season with salt and pepper, then insert a teaspoon of butter and a sprig of parsley into each fillet and secure with a toothpick.

Bring a pot of salted water to a boil and add the quinoa. Reduce heat and simmer for 15 minutes, then drain.

Peel the onion and dice it finely.

Wash the bell peppers and pepperoni, halve them and remove seeds and stems. Cut into 1 cm cubes.

Heat oil in a saucepan and sauté the onion cubes until translucent. Add the pepper and pepperoni cubes and continue to cook. Pour in the passata, season with salt and pepper, and simmer until the vegetables are firm yet tender.

Meanwhile, heat oil in a skillet and sear the chicken breasts on both sides. Reduce heat and cook slowly for about 8 minutes until done.

Plate the quinoa, top with the roasted pepper mixture, and place the chicken breast on top.
