Chicken breast with potatoes

Ingredients
- 4 chicken breast fillets
- 2 tbsp dried thyme
- 1 tbsp finely chopped sage leaves
- 2 garlic cloves (finely chopped)
- 2 small red chili peppers (chopped)
- 2 lemons (juice)
- 100 ml extra virgin olive oil
- 2 lemon slices
- 400 g boiled potatoes
- Salt
- black pepper (freshly ground)

Whisk together oil, garlic, sage, thyme, chili peppers, lemon juice, salt and pepper to make a marinade. Rinse the meat, pat dry, coat with the marinade, cover and refrigerate overnight.

Place the fillets in a large pan over medium heat, covered, and cook for about 10-12 minutes on each side (simmer more than sear). Pour the remaining marinade into the pan and let it simmer. Add lemon slices and continue cooking.

Halve or quarter boiled potatoes with skin on. Heat 3-4 tbsp oil in a skillet and brown all sides until golden. Season with salt and pepper. Plate the meat with the roasted potatoes. Serve with fresh arugula salad.
