Pasta with Tuna

Ingredients
- 400 g spaghetti
- 4 large tomatoes
- 1 clove garlic
- 5 anchovy fillets
- 250 g small porcini mushrooms (or button mushrooms)
- 1 can tuna in its own juice (150 g drained weight)
- 1 bunch parsley
- 3 tbsp olive oil
- Salt
- black pepper from the mill
Instructions

Cook pasta in boiling salted water until al dente according to package instructions.

Score tomatoes crosswise, briefly blanch, peel, quarter and seed them, then dice. Peel and finely chop garlic.

Cut anchovies into small pieces.

Clean mushrooms and slice thinly.

Drain tuna and flake it slightly.

Wash parsley, pat dry, tear leaves, set aside a few, finely chop the rest.

Heat olive oil in a pan, sauté garlic and mushrooms, add tomatoes and anchovies and simmer for about 6 minutes, season with salt and pepper, then fold in the tuna.

Drain pasta, reserve about half a cup of pasta water. Mix pasta and parsley into the tuna mixture, add reserved pasta water, season to taste, garnish with remaining parsley leaves.
