Jewish-Style Pasta Casserole (Kugel)

Ingredients

  • 250 g thin ribbon pasta
  • 3 tbsp oil
  • 150 g sugar
  • 250 g quark
  • 3 eggs
  • Salt
  • 1 orange
  • 1 pinch pepper

Instructions

    Cook the noodles in salted water according to package instructions until al dente. Peel the orange with a sharp knife, removing the white pith. Cut fruit segments from the separating membranes and catch the juice that drips out. Squeeze the juice from the remaining orange parts. Add the juice with half the sugar and 2 tbsp oil to a pan and lightly caramelize; fold in the finely chopped orange slices and mix into the well-drained noodles. Whisk the eggs with the remaining sugar until frothy, then stir in the quark and a touch of pepper.

    Grease a baking dish with the remaining oil, pour in the noodle mixture, and bake in a preheated oven at 180 °C for about 50 minutes until the surface is lightly browned. Remove from the oven and serve hot.
