Pasta with Ham, Asparagus, and Parmesan

Ingredients

  • 350 g whole wheat penne
  • Salt
  • 500 g Green Asparagus
  • 1 onion
  • 1 Garlic clove
  • 80 g parmesan (1 piece)
  • 1 tsp butter
  • 80 g diced ham (3% fat)','100 ml dry white wine (or vegetable broth)','pepper','4 sage leaves

Instructions

    Cook pasta according to package instructions in plenty of boiling salted water until al dente.

    Meanwhile, peel the lower third of the asparagus, cut off woody ends, and slice stalks diagonally into 3–4 cm pieces. Peel onion and garlic and finely dice them. Grate parmesan cheese.

    Heat butter in a pan and briefly sauté onion, garlic, and ham. Add asparagus and deglaze with wine. Cover and cook for 5–6 minutes.

    Drain pasta, let it drain, then toss it into the ham‑asparagus mixture. Add remaining parmesan (except 1 tbsp), mix well, and season with salt and pepper.

    Serve pasta on four plates, sprinkle with extra cheese, wash sage leaves, shake dry, and garnish the dish with them.
