Asparagus and Parma Ham Pizza

Ingredients
- 0.5 cube Yeast
- 400 g flour
- 1 tsp salt
- 3 tbsp olive oil
- flour (for working surface)
- 500 g white asparagus
- 300 g green asparagus
- sugar
- 100 g freshly grated Parmesan
- olive oil
- 12 slices Parma ham
- crushed pepper
- basil (for garnish)

Dissolve the yeast in 200 ml lukewarm water. Mix the flour with the salt, place it in a bowl, press a well in the center, pour in the yeast mixture and olive oil, and knead by hand into a smooth dough. If the dough is too wet, add more flour; if it’s too dry, add a little more lukewarm water.

Knead the dough on a floured work surface for about 10 minutes, return it to the bowl, cover, and let rise in a warm, draft-free place for about 1 hour.

Meanwhile, peel the white asparagus completely and only the lower third of the green asparagus; cut off the woody ends. Blanch the white asparagus in boiling salted water with a pinch of sugar for about 15 minutes and the green asparagus for about 8 minutes. Drain, shock in cold water, let drain, and split the spears lengthwise.

Preheat the oven to 220°C (428°F) with upper and lower heat.

Knead the dough again briefly and roll it into four flat discs. Place them on a baking sheet lined with parchment paper, sprinkle with Parmesan, top with asparagus, drizzle with olive oil, and bake for about 15 minutes in the hot oven.

Distribute the Parma ham over the finished pizzas, drizzle once more with olive oil, season with crushed pepper, and serve garnished with basil.
