Asparagus Wrapped in Puff Pastry

- 32 stalks of white asparagus
- Salt
- 1 tsp whole-grain sugar
- 450 g frozen puff pastry
- 2 tbsp spelt flour type 1050 (for dusting the work surface)
- 8 slices of ham
- 1 tbsp melted butter
- parsley for garnish

Peel the asparagus, trim the woody ends, and cook the stalks in boiling salted water with whole-grain sugar for about 5 minutes. Drain, shock in cold water, and let drain well.

Thaw the puff pastry and roll it thin on a floured work surface. Cut into 8 strips (about 10x15 cm). Wrap four asparagus stalks around each ham slice, lay lengthwise on a pastry strip, and roll up. Press the ends slightly together and place the parcels seam-side down on a parchment-lined baking sheet.

Drizzle the parcels with melted butter and bake in a preheated oven at 200 °C (180 °C fan or gas level 3) for about 25 minutes until golden brown. Remove, plate, and serve garnished with parsley.
