Colorful Asparagus Gratin with Crispy Topping

Ingredients
- 500 g white asparagus
- 250 g Broccoli
- 1 Carrot
- 100 g cooked ham (without fat edge)
- 1 tbsp Sunflower oil
- 250 ml vegetable broth
- Salt
- Pepper
- 40 g sour cream (2 tbsp)
- 1 whole-grain baguette roll
- 0.5 lemon
- 30 g chopped pine nuts (2 tbsp)

Wash asparagus, remove woody ends, peel the stalks generously and cut into about 3 cm pieces. Spread in a baking dish.

Clean broccoli, wash and divide into florets. Peel carrot, wash, peel and slice into rounds.

Dice ham into small cubes.

Heat oil in a pot. Sauté broccoli and carrots while stirring. Add 250 ml vegetable broth. Season with salt and pepper.

Bring to a boil once, then remove from heat. Stir in sour cream and ham cubes, spreading over the asparagus.

Crush the baguette roll into fine crumbs using a food processor and place in a small bowl. Squeeze lemon juice and mix 2 tbsp of it with pine nuts and the crumbs.

Evenly sprinkle crumb mixture over the asparagus and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 30 minutes until golden brown.
