Pasta with Chicken Sauce

Ingredients

  • 1 onion
  • 3 bell peppers (red, yellow, green)
  • 200 g mushrooms
  • 2 tbsp olive oil
  • 400 g ground chicken
  • 300 g passata
  • 200 ml vegetable broth
  • 1 bay leaf
  • 350 g spaghetti
  • 100 g Sour cream
  • Salt
  • Pepper
  • 1 tsp lemon juice
  • 1 tsp dried basil
  • 1 tsp Dried oregano
  • Nutmeg (freshly grated)
  • 4 tbsp shredded cheese (e.g. Emmental)
  • basil (for garnish)

Instructions

    Peel and finely dice the onion. Wash the peppers, halve them, remove seeds and white membranes, and dice the flesh. Clean the mushrooms and slice them.

    Heat oil in a pot, sauté the onion cubes until translucent, add the ground chicken and brown it. Pour in the tomatoes and broth, add the bay leaf and simmer gently for about 30 minutes.

    Cook the spaghetti in boiling salted water al dente. Season the sour cream with lemon juice, salt, and pepper. Flavor the sauce with basil and oregano. Adjust seasoning with salt, pepper, and nutmeg.

    Drain the pasta, place on plates, pour the sauce over it. Spread 1-2 tbsp sour cream and a bit of cheese on top and garnish with basil before serving.
