Ingredients

  • 350 g spaghetti
  • 2 Avocados
  • Tabasco
  • juice of one lemon
  • 2 ripe tomatoes
  • 0.5 bunch Parsley
  • Salt
  • Pepper (freshly ground)

Instructions

    Halve the avocados, remove the pits, scoop out the flesh and mash with a fork. Stir in lemon juice, salt, pepper and a few drops of Tabasco, tasting as you go.

    Wash the tomatoes, quarter them, seed them, then slice into strips and dice into cubes. Wash the parsley, shake dry and tear the leaves before chopping.

    Cook the pasta in plenty of boiling salted water until al dente.

    Drain the cooked pasta and toss with avocado puree, tomatoes and parsley, then serve on a plate.
