Pasta with Carrot Horseradish Sauce and Roast Beef

Ingredients

  • 1 bundle carrots
  • 1 onion
  • 60 g Butter
  • Salt
  • Pepper
  • 400 g pappardelle
  • 250 g sour cream
  • 150 ml milk
  • 8 tsp grated horseradish
  • 1 bundle chives
  • 1 tart apple
  • 16 slices roast beef cut

Instructions

    Peel and slice the carrots into sticks. Peel and dice the onion. Heat 30 g butter in a pot. Sauté onion and carrots while stirring for 2 minutes. Season with salt and pepper. Cover and simmer over low heat for 8 minutes.

    Cook pasta according to package instructions in plenty of salted water until al dente. Whisk sour cream with milk. Add to the carrots and bring to a boil once. Stir in horseradish. Rinse chives, shake dry and cut into fine ribbons. Wash apple and grate roughly. Mix chives and apple into the sauce. Taste again.
