Ingredients

  • 50 g fresh morel
  • 2 shallots
  • 4 stems oregano
  • 1 tbsp Olive Oil
  • 100 ml white port wine
  • 125 ml meat stock
  • salt, pepper from the mill
  • 300 g beef fillet slice
  • 500 g pasta
  • 2 Tomatoes
  • 50 g pecorino
  • 150 g crème fraîche
  • oregano

    Clean and trim the morels; cut large ones into smaller pieces. Peel and dice the shallots. Rinse oregano stems, strip leaves from stems, finely chop oregano. Heat olive oil. Sauté shallots, oregano, and morels. Deglaze with port wine and add meat stock. Simmer for 8-10 minutes. Season with salt and pepper. Add beef fillet slices and let them soak in the sauce for 15 minutes.

    Cook pasta in plenty of salted water according to package instructions until al dente. Rinse tomatoes, dice them, removing seeds. Grate pecorino.
