Pasta with Artichokes

Ingredients

  • 8 fresh artichokes
  • 4 cloves garlic
  • 4 stalks parsley (finely chopped)
  • juice of half a lemon
  • Olive oil (extra virgin)
  • 30 g Butter
  • 500 g penne
  • Salt
  • Pepper (freshly ground)
  • parmesan

Instructions

    Remove the hard outer leaves and stems of the artichokes and halve them. Dip the artichokes in water with a little lemon juice to prevent discoloration, then dry well with a kitchen towel. Peel the garlic.

    Heat 4 tbsp olive oil in a large pan and sauté the artichokes with the garlic. Add the lemon juice, 50 g water and half of the parsley, cover and simmer for about 20 minutes over low heat. When the artichokes are tender, season with salt and pepper to taste. Melt the butter in a separate pan.

    Cook the pasta al dente while the artichokes finish cooking. Add the melted butter, artichokes and remaining parsley to the pasta and mix well. Serve immediately with plenty of parmesan.
