Pasta Spinach Gratin

Ingredients
- 400 g short macaroni
- Salt
- 450 g fresh leafy spinach
- 1 Shallot
- 1 Garlic clove
- olive oil
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 250 g mascarpone
- 350 ml vegetable broth
- 125 g fontina cheese
- 100 g freshly grated Parmesan
- butter (for the dish)
- 80 g breadcrumbs
- 30 g butter flakes
Instructions

Cook the pasta in boiling salted water for about 5 minutes, drain, rinse with cold water and let it drain well.

Wash, trim, clean the spinach and wilt it in boiling salted water. Drain, rinse with cold water, squeeze out excess moisture and roughly chop.

Peel the shallot and garlic, finely chop them and sauté in a pot with 1 tablespoon oil until translucent. Add the spinach, cook briefly, season with salt, pepper, and nutmeg, then remove from heat.

Whisk mascarpone with vegetable broth, fontina cheese, and half of the parmesan; season with salt and pepper.

Preheat the oven to 200°C (390°F) with upper and lower heating.

Combine pasta, spinach, and sauce in a buttered baking dish. Mix breadcrumbs with remaining parmesan, sprinkle over the pasta along with butter flakes, and bake for 20-25 minutes.

Remove from oven and serve immediately.
