Ingredients

  • 6 cloves garlic
  • olive oil
  • 800 ml vegetable broth
  • thyme
  • 1 tsp sage leaf
  • 4 fresh egg yolks
  • Salt
  • freshly ground pepper
  • 8 baguette slices
  • 8 slices Fontina cheese

Instructions

    Peel and crush the garlic. Heat oil in a pot and sauté the garlic until pale yellow.

    Add vegetable broth, bring to a boil over medium heat.

    Wash thyme, shake dry, pluck leaves, finely chop. Add thyme and sage (reserve some leaves for garnish) to soup. Season with salt and pepper.

    Preheat oven to 200°C. Drizzle baguette slices with oil, top with cheese slices, place on baking sheet, roast until golden.

    Strain soup through a fine sieve back into pot. Whisk in egg yolks.

    Serve soup in four warmed plates, add two croutons each, sprinkle remaining herbs on top and serve.
