Ingredients
- 600 g fontina cheese
- 40 ml milk
- 50 g butter
- 6 egg yolks
- Salt
- Pepper
- 0.5 loaf white bread
- 2 butter

Remove the rind from the cheese, finely dice it and leave it in milk overnight.

Melt the butter with the cheese and milk in a double boiler while constantly stirring with a wooden spoon.

Once the mixture becomes a smooth cream, add the egg yolks one at a time until well combined.

Do not let the fondue boil. Season with salt and pepper and bring to the table in a caquelon.

Slice the white bread into pieces, roughly cube them and toast the cubes in butter.

Serve the fondue with various salads or fresh raw vegetables for dipping.
