Pasta Salad with Shrimp and Vegetables

Ingredients
- 2 stalks basil
- 2 stalks Parsley
- 300 g large shrimp (peeled, deveined)
- 1 clove garlic
- 3 tbsp olive oil
- Salt
- Pepper
- 1 red bell pepper
- 1 yellow bell pepper
- 1 Red Onion
- 8 leaves lettuce
- 200 g orzo pasta
- 1 tbsp Lemon Juice
Instructions

Wash basil and parsley, shake dry and chop leaves.

Rinse shrimp and pat dry. Peel garlic, press it, and mix with herbs and oil in a bowl. Season with salt and pepper, add shrimp, stir, and let marinate for 1 hour.

Meanwhile wash bell peppers, trim them, and cut into 1 cm cubes. Peel onion and slice thinly.

Wash lettuce leaves and shake dry.

Cook pasta about 15 minutes before serving according to package instructions until al dente.

During this time remove shrimp from the marinade and sear in a hot pan over high heat for 1–2 minutes on each side.

Add vegetables and cook together for 2 more minutes.

Drain pasta and mix into the shrimp mixture. Season with salt, pepper, and lemon juice to taste.

Distribute lettuce leaves onto four plates and arrange the pasta salad on top.
