Paprika Frittata

Ingredients

  • 3 bell peppers
  • 0.5 stalk leek
  • 50 g black olives (pitted)
  • 2 shallots
  • 1 Garlic clove
  • 2 tbsp butter
  • 6 Eggs
  • 3 tbsp heavy cream
  • 100 g feta cheese
  • Salt
  • Pepper (freshly ground)

Instructions

    Wash, trim, halve, core the bell peppers, remove all white membranes and cut into large pieces.

    Peel and finely dice the shallots and garlic.

  3. 3.

    Wash, trim the leek and slice into rings.

  4. 4.

    Sauté the shallots in hot butter until translucent, add the garlic, briefly cook, then stir in the peppers and leeks and add the olives for about 4 minutes.

    Whisk the eggs with the cream, season with salt and pepper and pour into the pan. Sprinkle crumbled feta on top and let it set over low heat for about 6-8 minutes, allowing the bottom to brown slightly. Flip the frittata using a large plate and cook another 2-3 minutes until done.
