Ingredients
- 400 g papaya (1 papaya)
- 1 red bell pepper
- 400 g celery stalks
- 400 g Carrots
- 2 tsp fresh chopped ginger
- 3 Tbsp plant oil
- 1 tbsp White Wine Vinegar
- 2 tbsp lemon juice
- 2 tsp brown sugar
- 0.5 tsp ground allspice
- Salt
- pepper (from grinder)
- 1 bunch spring onions

Peel the papaya, halve it and remove the seeds. Slice the flesh lengthwise into thin strips. Halve the bell pepper, deseed, clean, and cut into fine strips. Wash, trim, and slice celery stalks into very thin rounds. Peel carrots, halve them crosswise, and slice lengthwise into thin strips.

Whisk together oil, vinegar, lemon juice, sugar, allspice, ginger, salt, and pepper. Toss the papaya and vegetables with the dressing and let rest for about 20 minutes. Slice spring onions into thin strips.
