Breaded Chicken Pieces with Tomato Dip

- 600 g tomatoes
- 1 clove garlic
- 1 Shallot
- olive oil
- 1 tbsp Tomato Paste
- 100 ml Vegetable broth
- Salt
- Pepper (freshly ground)
- 600 g chicken breast fillets (ready to cook, skinless)
- 1 egg
- flour (for dredging)
- 120 g breadcrumbs

For the tomato sauce, blanch the tomatoes, cool, peel, quarter, core and dice. Peel and finely chop the garlic and shallot; sauté in a pot with 2 tbsp hot oil until translucent. Add the tomatoes and tomato paste, pour in the broth, season with salt and pepper, and simmer over medium heat for about 10 minutes.

Meanwhile wash the chicken, pat dry and cut into large pieces. Beat the egg, season with salt and pepper. Dredge each piece first in flour, then in beaten egg, and finally in breadcrumbs. Press the coating firmly onto the meat and fry in a hot pan with oil until golden brown on all sides. Skewer the pieces and serve with the seasoned tomato sauce.
